- Preheat your oven to 375°F (190°C) and prepare a muffin tin by lining it with cupcake liners or greasing each cup.
- In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, onion, garlic, egg, BBQ sauce, smoked paprika, salt, and pepper. Mix gently until just combined.
- Divide the meat mixture into eight equal portions and shape each into a cupcake form. Wrap each cupcake snugly with a slice of beef bacon.
- Place the wrapped meatloaf cupcakes into the prepared muffin tin and drizzle a little extra BBQ sauce on top.
- Bake for 25-30 minutes until golden brown and the bacon is crispy. Ensure the internal temperature reaches 160°F (70°C).
- Allow to cool for about 5 minutes in the tin, then carefully lift each cupcake out and place on a serving platter.
