- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine ¾ cup of creamy peanut butter with ½ cup of brown sugar and ½ cup of granulated sugar. Blend until light and fluffy.
- Add 1 large egg and 1 teaspoon of vanilla extract. Beat until well combined.
- Sprinkle in 1 teaspoon of baking soda and a pinch of salt. Fold gently until just combined.
- Gently fold in 1 cup of colorful M&M's into the cookie dough.
- Drop rounded dough balls onto the prepared baking sheet, spacing them about 2 inches apart. Flatten slightly and sprinkle reserved M&M's on top.
- Bake for 8-10 minutes until edges are set and centers are slightly underbaked.
- Allow cookies to cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
