- Begin by creaming together the butter, oil, brown sugar, and honey in a large mixing bowl using a hand mixer for about 2-3 minutes until smooth and fluffy.
- Gently mix in the egg and vanilla extract on low speed until fully incorporated, about 1 minute.
- Gradually sift in the flour, baking soda, salt, and cinnamon, mixing on low speed just until combined.
- Cover the bowl with plastic wrap and refrigerate the dough for at least 1.5 hours.
- Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
