Step-by-Step Instructions
  1. Begin by creaming together the butter, oil, brown sugar, and honey in a large mixing bowl using a hand mixer for about 2-3 minutes until smooth and fluffy.
  2. Gently mix in the egg and vanilla extract on low speed until fully incorporated, about 1 minute.
  3. Gradually sift in the flour, baking soda, salt, and cinnamon, mixing on low speed just until combined.
  4. Cover the bowl with plastic wrap and refrigerate the dough for at least 1.5 hours.
  5. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  6. Scoop out portions of dough and roll into balls, placing them 2 inches apart on the baking sheet.
  7. Bake the cookies in the preheated oven for about 10 minutes until edges are slightly golden and centers are underbaked.
  8. Sprinkle a pinch of fleur de sel on each warm cookie right after removing from the oven.
