Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the room temperature salted butter and granulated sugar for about 2 minutes until fluffy.
  3. Beat in one large egg and a splash of vanilla extract until combined.
  4. Gradually add the all-purpose flour, baking soda, baking powder, salt, and matcha powder.
  5. Fold in the chopped white chocolate and roasted pistachios.
  6. Using a cookie scoop or about 2 tablespoons of dough, roll into balls and space them 2 inches apart on the baking sheets.
