Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F).
  2. Mash 3-4 overripe bananas until fairly smooth, then add 2 lightly beaten eggs and a splash of vanilla extract.
  3. Melt 1/3 cup of butter and allow it to cool, then stir it into the banana mixture.
  4. Mix in 1 cup of sourdough starter until combined, making sure there are no lumps.
  5. In a separate bowl, whisk together 1.5 cups all-purpose flour, 1 teaspoon baking powder, 1/2 teaspoon salt, 1/4 cup brown sugar, and 1/4 cup white sugar.
  6. Gently fold the dry ingredients into the wet mixture until no flour streaks remain.
  7. Pour the batter into a greased 9x5 inch loaf pan, leveling the top.
  8. Bake for about 60 minutes, or until the top is golden brown.
  9. Brush the top with golden syrup and cool in the pan for 30 minutes before transferring to a wire rack.
