For the Sandwich
  • 2 slices Sourdough Bread thick-sliced for best results
  • 4 oz Mozzarella Cheese pat dry to prevent sogginess
  • 2 tbsp Basil Pesto spread sparingly
  • 4 slices Sun-Dried Tomatoes optional, can substitute fresh tomatoes
  • 2 slices Bacon optional, can use plant-based alternatives
  • 1 tbsp Butter for frying, generously apply on bread's outer sides

Method
 

Step-by-Step Instructions
  1. Pat dry the mozzarella cheese with paper towels to prevent a soggy sandwich. Butter the outside of two slices of sourdough bread generously.
  2. In a non-stick frying pan, place the buttered slices of sourdough bread butter-side down. Layer one slice with mozzarella cheese, spread basil pesto, add sun-dried tomatoes and bacon if using.
  3. Top with another slice of mozzarella, cover with the second slice of sourdough bread, butter-side up.
  4. Heat the frying pan over medium heat, cook undisturbed for about 3-4 minutes until golden brown, then flip.
  5. Press down with a spatula, cook for another 3-4 minutes until cheese is melted and bread is golden.
  6. Remove from the pan, let cool for a minute, then slice in half and serve immediately.
