Step‑by‑Step Instructions
  1. In a medium bowl, combine the mayonnaise (or Greek yogurt), fresh lime juice, chili powder, garlic powder, cumin, paprika, and salt. Whisk until smooth and creamy.
  2. In a larger bowl, mix together the cooked shredded chicken, rinsed black beans, sweet corn, chopped jalapeños, quartered cherry tomatoes, diced red onion, and pepitas. Gently fold the ingredients.
  3. Pour the dressing over your salad mixture and use a large spoon to gently toss until evenly coated.
  4. Serve immediately or refrigerate for a few hours to enhance flavor.
