For the Skillet
  • 2 tablespoons Olive Oil or avocado oil
  • 1 Diced Onion or shallots
  • 1 pound Lean Ground Beef or ground turkey
  • 2 teaspoons Chili Powder adjust to preference
  • 1 teaspoon Ground Cumin or smoked paprika
  • to taste Kosher Salt
  • to taste Black Pepper
  • 3 cloves Grated Garlic fresh preferred
  • 2 cups Sweet Potatoes diced, or butternut squash
  • 1 can Fire Roasted Diced Tomatoes or regular diced tomatoes
  • 1 can Canned Diced Green Chiles or jalapeños
  • 1 cup Water or broth
  • 1 cup Shredded Cheddar Cheese or dairy-free cheese
  • to garnish Cilantro or parsley

Method
 

Cooking Instructions
  1. Heat the oil in a large skillet over medium-high heat for 1-2 minutes.
  2. Cook the beef and onion, crumbling the beef until browned and the onion is translucent, about 4-5 minutes.
  3. Add garlic, chili powder, and cumin; season with salt and pepper. Stir for another minute.
  4. Transfer the beef mixture to a plate, leaving drippings in the skillet. Wipe out excess grease.
  5. In the same skillet, combine sweet potatoes, fire-roasted tomatoes, green chiles, and water. Add spices and seasonings. Cover and simmer for about 20 minutes until fork-tender.
  6. Return beef mixture to the skillet, mix everything, and cook for another 2-3 minutes.
  7. Sprinkle cheddar cheese over the top, cover, and let sit until cheese melts, about 2-3 minutes.
  8. Garnish with cilantro and serve warm.
