Step‑by‑Step Instructions
  1. Start by chopping the chicken breasts into bite-sized pieces and set them aside. Finely dice the onion and mince the garlic.
  2. In a large skillet, heat a tablespoon of oil over medium-high heat. Add the chicken pieces and sprinkle with salt, searing until golden brown, about 5-7 minutes. Remove the chicken and set aside.
  3. Add oil to the skillet if needed, and sauté the onion and garlic for about 3-4 minutes until the onion is translucent.
  4. Pour in the coconut milk, lime juice, cilantro, chili flakes, and smoked paprika. Stir and simmer for about 5 minutes.
  5. Return the chicken to the skillet and cover. Let it simmer for an additional 10-15 minutes until cooked through.
  6. Adjust the sauce consistency with chicken broth as needed, and season to taste.
  7. Garnish with cilantro and lime wedges, and serve hot over rice or quinoa.
