Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet.
  2. In a large mixing bowl, whisk together the all-purpose flour, cornmeal, brown sugar, baking powder, and salt.
  3. Add buttermilk, softened butter, and the egg into the bowl with the dry ingredients, and stir until just combined.
  4. Gently fold in the diced jalapenos.
  5. Scoop rounded portions of the batter onto the prepared baking sheet, spacing them two inches apart.
  6. Bake for 12-15 minutes until edges are lightly browned; cool on the pan for 3-5 minutes before transferring to a wire rack.
  7. In a medium bowl, mix goat cheese, cream cheese, and whole milk until smooth and creamy.
  8. Stir in the chopped cooked bacon and fresh chives.
  9. Spread or pipe the filling onto the flat side of one cornbread half and top with another half.
