Cooking Steps
  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat until shimmering.
  2. Add 1 pound of large shrimp, season with Cajun seasoning, smoked paprika, cayenne pepper, salt, and pepper. Sauté for about 2 minutes on each side until vibrant pink and opaque.
  3. Remove the shrimp from the skillet and set aside. In the same skillet, melt 2 tablespoons of unsalted butter over medium heat. Add minced garlic, diced onion, chopped celery, and diced green bell pepper. Sauté for 3-4 minutes until softened.
  4. Stir in 1 can of drained diced tomatoes and 1 cup of chicken broth. Simmer for about 5 minutes until slightly thickened.
  5. Return shrimp to skillet, cook for an additional 1-2 minutes until heated through and well-coated with sauce.
  6. Remove from heat and garnish with freshly chopped parsley. Serve hot over rice or with crusty bread.
