  • 1 large Egg for egg wash
For the Filling
  • 2 cups Spinach fresh or frozen, thawed and drained
  • 1 cup Feta Cheese crumbled, can substitute with ricotta, mozzarella, or goat cheese

Method
 

Step-by-Step Instructions
  1. Thaw puff pastry until pliable, about 30 minutes. Preheat oven to 400°F (200°C). Roll out on a floured surface.
  2. Sauté spinach over medium heat for 3-4 minutes until wilted. Drain and mix with feta cheese.
  3. Roll out pastry into a rectangle about 1/4 inch thick. Spread spinach-feta mixture over half. Cut into 1-inch strips and twist.
  4. Whisk the egg for the egg wash and brush over each twist. Place on a baking sheet lined with parchment paper.
  5. Bake in preheated oven for 15-20 minutes until golden. Cool slightly before serving.
