- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a mini food processor, blend the cottage cheese until smooth, about 30 seconds.
- In a large mixing bowl, combine processed cottage cheese with all-purpose flour, baking powder, salt, and olive oil. Stir until integrated.
- Fold in chopped baby spinach and mozzarella cheese, mixing until evenly distributed.
- Dust a surface with flour, shape the dough into a log, cut into 6 pieces, and flatten each piece into a circle with a hole in the center.
- Arrange shaped flagels on the baking sheet, brush with egg wash, and leave space between each.
- Bake for 22-25 minutes or until golden brown and fragrant.
- Cool on a wire rack for about 10 minutes before serving warm.
