  • 1.5 pounds boneless chicken thighs or chicken breasts for a leaner option
  • 1/4 cup soy sauce or tamari for gluten-free
  • 2 tablespoons honey or maple syrup for vegan
  • 2 cloves garlic minced; can use garlic powder
  • 1 tablespoon grated ginger or ground ginger as a substitute
  • 1 tablespoon sesame oil or olive oil
  • 1 tablespoon cornstarch or arrowroot powder
For the Rice and Vegetables
  • 4 cups cooked jasmine rice or brown rice
  • 2 cups broccoli florets or snap peas/green beans
  • 1 medium bell pepper any variety
  • 2 stalks green onions sliced; or chives
  • 2 tablespoons sesame seeds or crushed peanuts
  • salt to taste
  • pepper to taste

Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together soy sauce, honey, rice vinegar, minced garlic, grated ginger, and sesame oil until smooth.
  2. Coat the chicken thoroughly with half of the sauce. Let it marinate in the refrigerator for at least 15 minutes.
  3. Heat a large skillet over medium-high heat and cook the marinated chicken for 8-10 minutes until golden brown.
  4. Add broccoli florets and sliced bell pepper to the skillet. Stir-fry for about 5 minutes.
  5. Combine the remaining sauce with cornstarch mixed in water, then pour it into the skillet, stirring until thickened.
  6. Spoon cooked rice into bowls and top with the chicken and vegetable mixture.
  7. Garnish each bowl with sliced green onions and sesame seeds.
