  • 2.5 to 3 lbs Bone-in, Skin-on Chicken Using thighs or drumsticks ensures juiciness.
  • 1/4 cup Olive Oil Avocado oil can be a great alternative.
  • Sea Salt Essential seasoning.
  • Black Pepper Essential seasoning.
For the Aromatics
  • 3 medium Shallots These add subtle sweetness and depth.
  • 20 to 25 whole Garlic Cloves Fresh garlic is preferred for best taste.
  • 1 small bunch Fresh Thyme Dried thyme can also be used.
  • 3 to 4 sprigs Fresh Rosemary A sprinkle of dried rosemary can be used.
For Cooking
  • 1/2 cup Chicken Broth Opting for low-sodium broth is recommended.
  • 1/2 cup White Wine Chardonnay or Pinot Grigio work wonderfully.

Method
 

Step‑by‑Step Instructions
  1. Preheat the oven to 400°F (204°C) and line a large casserole dish with heavy-duty foil.
  2. Layer the casserole dish with thinly sliced shallots, then add half of the whole garlic cloves, and sprinkle fresh thyme and rosemary.
  3. Drizzle olive oil over the chicken, sprinkle with sea salt and black pepper, then place the seasoned chicken on top of the aromatics.
  4. Scatter remaining garlic cloves around the chicken.
  5. Pour chicken broth and white wine into the dish around the chicken.
  6. Roast uncovered for about 1 hour, until skin is golden brown and a thermometer reads 165°F (74°C).
  7. Broil for an additional 5-7 minutes for extra crispiness.
  8. Allow the chicken to rest for about 10 minutes before serving.
