Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Pat dry the chicken thighs or breasts with paper towels. Generously season both sides with salt and pepper.
  2. In a mixing bowl, combine freshly squeezed orange juice, honey, olive oil, and chopped fresh thyme. Whisk until well blended.
  3. Place the seasoned chicken in a resealable plastic bag or shallow dish, then pour the marinade over it. Seal or cover and marinate in the refrigerator for up to 24 hours.
  4. Transfer the marinated chicken to a roasting pan in a single layer. Pour any remaining marinade over the top. Roast for 25-30 minutes, basting halfway through.
  5. Insert a meat thermometer into the thickest part of the chicken, aiming for an internal temperature of 165°F (74°C).
  6. For extra crispiness, set your oven to broil and place the chicken under it for an additional 3-5 minutes.
  7. Remove the chicken from the oven and let it rest for 5 minutes. Drizzle remaining pan sauce over the chicken and serve hot.
