Ingredients
  

For the Beef
  • 1 pound Lean Ground Beef can swap for ground turkey
  • 1 medium Yellow Onion can substitute with shallots
  • 1 packet Taco Seasoning homemade for personal preference
For the Sweet Potatoes
  • 2 medium Sweet Potatoes any root vegetable can be substituted
  • 2 tablespoon Olive Oil can replace with avocado oil
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Cinnamon
  • to taste Salt
  • to taste Pepper
For the Toppings
  • 1 medium Avocado can use guacamole if short on time
  • 1 cup Cottage Cheese Greek yogurt can be a substitute
  • to taste Hot Honey regular honey with chili flakes can be used

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss diced sweet potatoes with olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread on a baking sheet. Roast for 40–45 minutes.
  3. Heat olive oil in a large skillet over medium heat. Add diced onion and sauté for about 5 minutes until soft.
  4. Add the ground beef and taco seasoning to the skillet. Cook for 8–10 minutes, stirring until browned.
  5. Assemble the bowls with roasted sweet potatoes and taco-seasoned beef. Top with avocado and cottage cheese.
  6. Drizzle with hot honey before serving.
