  • 3 tablespoons sweet chili sauce
  • 1 tablespoon soy sauce low-sodium preferred
For Cooking
  • 2 tablespoons olive oil or your favorite cooking oil
For Aromatics
  • 2 teaspoons garlic minced
  • 1 teaspoon ginger minced
For Garnish
  • 2 tablespoons green onions sliced
  • red pepper flakes optional, to taste

Method
 

Step-by-Step Instructions
  1. Rinse the shrimp under cold water, pat dry with a paper towel, and season with salt and pepper.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat until it shimmers.
  3. Add minced garlic and ginger to the skillet, stirring for about 1 minute until fragrant.
  4. Add the shrimp, spreading in a single layer, and cook for 2-3 minutes until pink and opaque.
  5. Gently stir in the diced pineapple and cook for another 2 minutes.
  6. Pour in the sweet chili sauce and soy sauce, stirring to combine, and cook for 1-2 minutes.
  7. Reduce heat to low and let the sauce simmer for an additional 2-3 minutes until slightly thickened.
  8. Remove from heat and stir in sliced green onions.
  9. Adjust seasoning with salt and pepper if needed.
  10. Serve hot over jasmine rice, in tacos, or as an appetizer, garnished with more green onions or sesame seeds.
