  • 1 tablespoon Psyllium Husk
  • 1/4 cup Arrowroot Flour Can swap with other starchy flours
  • 1 teaspoon Baking Powder Optional for puffier tortillas

Step-by-Step Instructions
  1. Prepare Sweet Potatoes: Steam or boil 2 medium sweet potatoes for 15-20 minutes until tender. Mash and measure 1 cup.
  2. Make the Mixture: Combine mashed sweet potatoes, 2 tablespoons of hot water, and 2 tablespoons of vegan butter. Add spices and mix until smooth.
  3. Combine Ingredients: In another bowl, mix 1/2 cup gluten-free sourdough starter and 1 tablespoon psyllium husk. Add sweet potato mixture and let sit for 10 minutes.
  4. Form the Dough: Add 1/4 cup arrowroot flour and 1 teaspoon baking powder if using. Mix until just combined.
  5. Cook the Tortillas: Preheat a skillet over medium heat. Roll dough into balls, flatten between parchment, and cook each tortilla 30-45 seconds per side.
