Ingredients

For the Filling
  • 8 oz Cream Cheese softened, at room temperature
  • 1/2 cup Powdered Sugar can substitute regular sugar but may take longer to dissolve
  • 1 tsp Vanilla Extract preferably pure
  • 1 cup Heavy Whipping Cream cold for best results
For the Strawberries
  • 12 large Strawberries fresh and ripe
For the Topping
  • 1/2 cup Graham Cracker Crumbs can substitute with crushed digestive biscuits

Equipment

  • mixing bowl
  • Electric Mixer
  • Piping bag or zip-top bag
  • sharp knife
  • Melon baller or small spoon

Method

Step-by-Step Instructions
  1. Begin by gently washing the strawberries under cool running water and patting them dry with a paper towel. Carefully slice each strawberry in half lengthwise, keeping the green stems intact for presentation.
  2. To ensure your strawberries stand upright, lightly trim the bottoms of each half with a sharp knife.
  3. Using a melon baller or a small spoon, hollow out the center of each strawberry half to hold the cheesecake filling.
  4. In a chilled mixing bowl, pour the heavy whipping cream and beat it with an electric mixer on medium speed for 3-4 minutes until stiff peaks form.
  5. In a separate bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy.
  6. Gently fold the whipped cream into the cream cheese mixture using a spatula.
  7. Spoon the cheesecake filling into a piping bag or zip-top bag and pipe it into the hollowed strawberries.
  8. Sprinkle a generous layer of graham cracker crumbs over each filled strawberry just before serving.
  9. Place the filled strawberries in the refrigerator and allow them to chill for at least 1 hour.
