For the Cornmeal Topping
  • 1 cup Cornmeal use gluten-free cornmeal for gluten-free option
  • 1 cup Milk substitute with non-dairy milk for lactose-free option
  • 1 large Egg substitute with flaxseed meal and water for vegan version
  • 1 cup Cheddar Cheese substitute with dairy-free cheese for non-dairy version
Optional Add-ins
  • 1/2 cup Black Olives omit or replace with jalapeños for spice

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Gather your ingredients and equipment, ensuring you have a large skillet and a 9x13-inch baking dish ready for assembly.
  2. In a large skillet over medium heat, add the ground beef and diced onion. Sauté for 5-7 minutes until browned and onion is translucent. Drain excess fat.
  3. Stir in black beans, diced tomatoes with green chilies, chili powder, cumin, garlic powder, salt, and pepper. Simmer for 5 minutes.
  4. In a separate bowl, combine cornmeal, milk, and egg. Whisk until smooth and set aside.
  5. Grease your baking dish, pour half of the cornmeal mixture in, then layer the beef mixture over it.
  6. Pour remaining cornmeal mixture over beef filling, spreading it out evenly.
  7. Sprinkle cheddar cheese and black olives on top of the cornmeal layer.
  8. Place in the oven and bake for 30-35 minutes until top is golden brown.
  9. Let cool for 10 minutes before slicing and garnish with fresh cilantro.
