Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Cube the butternut squash and slice the apples into even chunks. Spread them on a baking sheet and roast for about 25 minutes.
  3. In a skillet, melt butter or oil, add sliced fennel and onion, cooking for about 10 minutes until soft and golden brown.
  4. Add the sausage to the skillet, breaking it apart and cooking for another 5-7 minutes until browned.
  5. In a baking dish, layer the roasted squash and apples, followed by the caramelized fennel, onion, and sausage.
  6. Sprinkle Gruyere cheese over the top and bake for 25-30 minutes until bubbly and golden.
  7. Remove from the oven and let sit for about 10 minutes before serving.
