Preparation
- In a mixing bowl, whisk together egg yolk, lime juice, and mustard until combined.
- Gradually drizzle in oil while whisking until mixture thickens and emulsifies.
- Stir in minced chipotle pepper, paprika, honey, and season with salt and pepper. Chill in the refrigerator for at least 30 minutes.
- Season chicken breast cutlets generously with salt and pepper. Preheat grill or skillet to medium-high heat.
- Cook chicken for about 4-5 minutes on each side until golden brown and internal temperature reaches 165°F.
- Remove from heat and let the chicken rest before slicing.
- Start with your choice of bread. Spread chipotle mayo on one side of each slice.
- Layer sliced grilled chicken, bacon, cheddar cheese, and tomato on the bottom slice. Top it with another slice of bread, mayo side down.
- Preheat the panini press or skillet to medium heat. Butter the outer sides of the sandwich.
- Place assembled sandwich in the press or skillet and grill for 3-4 minutes on each side until golden brown and cheese is melted.
- Let the panini rest for about a minute, then slice diagonally and serve hot.
