Preparation
  1. In a mixing bowl, whisk together egg yolk, lime juice, and mustard until combined.
  2. Gradually drizzle in oil while whisking until mixture thickens and emulsifies.
  3. Stir in minced chipotle pepper, paprika, honey, and season with salt and pepper. Chill in the refrigerator for at least 30 minutes.
  4. Season chicken breast cutlets generously with salt and pepper. Preheat grill or skillet to medium-high heat.
  5. Cook chicken for about 4-5 minutes on each side until golden brown and internal temperature reaches 165°F.
  6. Remove from heat and let the chicken rest before slicing.
  7. Start with your choice of bread. Spread chipotle mayo on one side of each slice.
  8. Layer sliced grilled chicken, bacon, cheddar cheese, and tomato on the bottom slice. Top it with another slice of bread, mayo side down.
  9. Preheat the panini press or skillet to medium heat. Butter the outer sides of the sandwich.
  10. Place assembled sandwich in the press or skillet and grill for 3-4 minutes on each side until golden brown and cheese is melted.
  11. Let the panini rest for about a minute, then slice diagonally and serve hot.
