  1. Pound the chicken breasts to an even thickness of about ½ inch between sheets of plastic wrap.
  2. Season both sides generously with salt and black pepper.
  3. Prepare the breading station with flour, beaten eggs, and panko breadcrumbs.
  4. Coat each chicken breast in flour, dip into beaten eggs, then coat in panko breadcrumbs.
