Ingredients
  

For the Biscuit Crust
  • 75 g Unsalted butter Adds richness and flavor to the crust; substitute with salted butter, reduce added salt.
  • 45 g Icing sugar Provides sweetness and fine texture; granulated sugar works too.
  • 130 g All-purpose flour Forms base structure; gluten-free flour can be used.
  • 10 g Cornstarch Enhances tender texture; can be omitted if using gluten-free flour.
  • 1 g Fine salt Balances sweetness in the crust.
  • 30 g Whole egg, beaten Acts as binding agent; egg replacer can be used for vegan option.
For the Custard
  • 500 ml Whole milk Provides a creamy base; substitute with almond or oat milk for dairy-free.
  • 100 g Granulated sugar Sweetens the custard; adjust according to preference.
  • 1 tsp Vanilla extract Adds depth of flavor; fresh vanilla bean can intensify taste.
  • 4 units Egg yolks Thickens the custard; silken tofu can be used for vegan version.
For the Caramel Glaze
  • 150 g Granulated sugar Essential for creating shiny caramel glaze; careful while melting.
  • 30 ml Water Helps dissolve sugar evenly; don’t stir once bubbling.
  • a pinch Salt Enhances sweetness of caramel.

Method
 

Prepare the Biscuit Dough
  1. Sift icing sugar, flour, cornstarch, and salt into a bowl. Rub in cold butter until mixture resembles coarse sand. Stir in beaten egg until cohesive dough forms. Wrap in plastic wrap and chill for 30 minutes.
Roll Out and Bake the Crust
  1. Preheat oven to 160°C (320°F). Roll dough out between parchment to 3mm thickness. Transfer to tart pan, pressing edges. Bake for 15-20 minutes until golden. Cool crust completely.
Make the Custard
  1. Reduce oven to 120°C (248°F). Heat milk and sugar in a saucepan, stirring until sugar dissolves. Remove from heat and stir in vanilla. Whisk egg yolks, then slowly add warm milk mixture while whisking.
Bake the Custard
  1. Pour custard mixture into prepared crust, filling almost to top. Bake for 40-50 minutes until set but still jiggles slightly. Cool on wire rack then refrigerate for at least 4 hours.
Prepare the Caramel Glaze
  1. Combine granulated sugar and water in a saucepan. Bring to boil without stirring until deep amber color, about 10 minutes. Remove from heat and stir in a pinch of salt.
Glaze the Tart
  1. Once tart is chilled, pour caramel glaze over custard for an even layer. Allow to set for 15 minutes. Slice and serve, optionally garnished with fresh fruit or whipped cream.
