Ingredients
  

For the Salad
  • 1 head Romaine Lettuce Chopped into bite-sized pieces
  • 6 slices Bacon Cooked and chopped
  • 1 cup Grape Tomatoes Halved
  • 1/2 cup Shredded Swiss Cheese
  • 1/4 cup Finely Shredded Parmesan Cheese
  • 1/4 cup Slivered Almonds Toasted
  • 1 cup Croutons Gluten-free options available
For the Dressing
  • 1/2 cup Light Olive Oil Or extra virgin olive oil for enhanced flavor
  • 1/4 cup Fresh Lemon Juice Or lime juice as a substitute
  • 2 cloves Garlic Minced
  • 1 tablespoon Dijon Mustard Substitute with yellow mustard if necessary
  • 1 tablespoon Honey Maple syrup for vegan option
  • to taste Salt
  • to taste Black Pepper Freshly cracked

Method
 

Preparation
  1. In a jar, combine olive oil, lemon juice, minced garlic, Dijon mustard, and honey. Season with salt and pepper. Shake well and chill.
  2. Preheat oven to 350°F. Toast slivered almonds on a baking sheet for 6-10 minutes until golden. Let cool.
  3. Increase oven to 400°F. Bake bacon on a lined baking sheet for 13-18 minutes until crispy. Let cool and chop.
  4. Chop romaine lettuce and place in a large bowl.
  5. Add bacon, grape tomatoes, Swiss cheese, Parmesan cheese to the lettuce.
  6. Pour chilled dressing over the salad and toss to coat.
  7. Add croutons just before serving and toss gently.
