Step-by-Step Instructions
  1. Peel and shred the carrots. Core and julienne the apples into even slices. Toss apples with lemon juice if preparing ahead. Chop the celery.
  2. In a large bowl, combine the carrots, apples, celery, and dried fruits. If using, add the nuts. Toss well to mix.
  3. In a small bowl, whisk together orange juice, zest, Greek yogurt, mayonnaise, honey, Dijon mustard, salt, and pepper until smooth.
  4. Pour the dressing over the salad mixture. Gently toss until everything is evenly coated.
