Brine

  • 1 tablespoon Fresh Parsley Chopped; try basil or arugula for a different twist.
  • 1 clove Garlic Minced.
  • 1 tablespoon Lemon Zest
  • 2 tablespoons Lemon Juice
  • 1 teaspoon Fine Salt
  • 1 teaspoon Black Pepper
Toppings
  • 5 oz Mozzarella Fresh or shredded.
  • 2 tablespoons Grated Parmesan Cheese Omit for a dairy-free version.
  • 1 teaspoon Ground Black Pepper For seasoning before serving.

Preparation
  1. Prepare your pizza dough according to your favorite recipe or use store-bought. Allow it to rise.
  2. Preheat your oven to 450°F (230°C).
  3. Shape the dough into a rectangular shape approximately 9x13 inches.
  4. Make the brine by combining olive oil, water, parsley, minced garlic, lemon zest, lemon juice, salt, and pepper. Shake to emulsify.
  5. Create dimples in the dough, pour the brine over it, then distribute mozzarella cheese on top.
  6. Bake the pizza for 8-10 minutes until golden brown and cheese is bubbling.
  7. Drizzle with fresh lemon juice and sprinkle with Parmesan cheese, parsley, and ground black pepper before serving.
