- Whisk together caster sugar, cornstarch, egg, fresh lemon juice, and lemon peel until smooth. Cook over simmering water, stirring for about 10 minutes until thickened. Stir in butter until melted and incorporated. Cool and refrigerate for 30 minutes.
- Scoop portions of the lemon curd onto a tray lined with parchment paper, then freeze for 1 hour.
- Cream together butter, caster sugar, lemon zest, and vanilla until fluffy. Beat in an egg, then gradually fold in flour, salt, and baking soda. Refrigerate dough for 20 minutes.
- Roll out dough to 1/4-inch thick, place a lemon curd portion in the center, and encase it with dough. Roll into a ball and coat in granulated sugar.
- Bake at 350°F (180°C) for 8-9 minutes until edges are golden and centers are soft. Cool on a wire rack.
