Ingredients
  

For the Salad
  • 2 cups Cucumbers sliced
  • 1 cup Cherry Tomatoes halved
  • 1 medium Red Onion thinly sliced
  • 1/4 cup Fresh Cilantro chopped
  • 1/4 cup Mint Leaves chopped
For the Dressing
  • 3 tablespoons Lime Juice freshly squeezed
  • 1 tablespoon Fish Sauce
  • 1 teaspoon Sugar
  • 1/2 teaspoon Red Chili Flakes or to taste

Method
 

Preparation
  1. Wash and dry your cucumbers, cherry tomatoes, and red onion. Slice the cucumbers lengthwise and into thin half-moons. Halve the cherry tomatoes.
  2. Thinly slice the red onion and set aside.
  3. Finely chop the cilantro and mint leaves, and set them aside.
  4. In a large mixing bowl, combine the sliced cucumbers, cherry tomatoes, red onion, cilantro, and mint leaves. Toss gently.
  5. In a separate bowl, whisk together lime juice, fish sauce, sugar, and red chili flakes until sugar is dissolved.
  6. Pour the dressing over the salad and toss gently. Let the salad sit for 5-10 minutes before serving.
