Ingredients
  

Sushi Base
  • 2 cups Sushi Rice Rinse thoroughly
  • 1/4 cup Rice Wine Vinegar Use apple cider vinegar if needed
  • 2 tablespoons Sugar
  • 1 teaspoon Salt
  • 2 tablespoons Furikake Seasoning Can make your own with toasted sesame seeds and crushed nori
Salmon Mixture
  • 1 pound Salmon Fillets Canned salmon works in a pinch
  • 3 tablespoons Soy Sauce/Tamari Opt for tamari for gluten-free
  • 4 ounces Cream Cheese
  • 2 tablespoons Mayonnaise Kewpie mayo offers a unique flavor boost
  • 1 tablespoon Sriracha Sauce Feel free to swap for sambal oelek
Toppings
  • 1 medium Avocado
  • 1 medium Cucumber
  • 2 stalks Green Onions Can be omitted if preferred
  • 4 sheets Nori Sheets

Method
 

Preparation
  1. Rinse sushi rice under cold water until water runs clear. Cook according to package instructions, let sit covered for 10 minutes.
  2. Transfer rice to a bowl and mix in rice wine vinegar, sugar, and salt. Let it cool to room temperature.
  3. Preheat air fryer to 400°F (or oven to 425°F). Season and cook salmon until flakes easily.
  4. Cool salmon slightly, then flake it into a bowl.
  5. Mix in cream cheese, mayonnaise, and sriracha until creamy.
  6. Prepare baking dish, press sushi rice into bottom evenly.
  7. Sprinkle furikake seasoning over rice, gently press into the rice.
  8. Spread salmon mixture over rice evenly.
  9. Bake in oven for 15 minutes until edges are bubbling and top is golden.
  10. Slice avocado, cucumber, and green onions for topping.
  11. Serve warm with nori sheets for scooping.

Notes

For best texture, rinse rice well and use damp hands when pressing it into the baking dish. Add fresh toppings just before serving.
