  • 1 lb Shrimp peeled and deveined
  • 2 tbsp Olive Oil
  • 1 tbsp Chipotle Powder
  • 1 tbsp Lime Juice freshly squeezed
  • 1 tsp Garlic Powder
For the Bowl
  • 2 cups Brown Rice cooked
  • 1 cup Black Beans drained and rinsed
  • 1 cup Corn frozen or canned
  • 1 cup Avocado diced
  • 1 cup Chopped Cilantro for garnish
  • 1 lime Lime Wedges for serving

Method
 

Shrimp Preparation
  1. In a mixing bowl, combine shrimp, olive oil, chipotle powder, lime juice, and garlic powder. Mix well to coat the shrimp.
  2. Heat a skillet over medium heat and cook the shrimp for about 2-3 minutes on each side until they are pink and opaque.
Assembly
  1. In a bowl, layer cooked brown rice, black beans, corn, and topped with the cooked shrimp.
  2. Garnish with diced avocado, cilantro, and serve with lime wedges on the side.
